Slow Cooked Pork rashers in Plum Sauce
Ingredients
- Pork rashers (I used 3 packs from woolies about 9 in a pack)
- 1/2 cup of plum jam
- 2 chicken stock cubes
- 3 tbsp soy sauce
- 1 tbsp minced garlic
- 1/4 cup brown sugar
- 1/2 cup water
- Corn flour to thicken
Instructions
- Place the pork rashers in the slow cooker.
- Combine all ingredients and pour over the pork. (The pork releases a lot of its own juices making it really liquidy so half way through I placed pork on a tray while I emptied the juice in the saucepan and thickened up with cornflour on the stove and added a little bit more plum jam and brown sugar) popped it all back in the slow cooker. Cooked on high for 4 hours and low for 2.

I just used a pork belly and added the sauce. This was sooooo delicious! An absolute winner in my house – yummo!

Just put it on to cook. Will slow cook over 8 hours. Hopefully same result.
Do you think you could you just omit the water? Would that mean I don’t have to thicken on the stove half way, or is it more likely to create new problems?

Sweet and sticky and saucy! YUM!! After I have removed the rashers from the pot, I dump my cooked rice in and mix it with the sauce. Served it with steamed vegetables. Thank you, Rhiannon!
