Slow cooked lamb is the BEST lamb!

Ingredients
 

  • 1 lamb leg
  • 5 sprigs rosemary
  • 5 sprigs mint
  • 3 tsp crushed garlic
  • Drizzle olive oil
  • 1tbls lemon juice
  • 1 tsp lemon rind
  • 1 cup beef stock
  • Gravy powder
  • Salt pepper

Instructions
 

  • Cut slits in lamb and put rosemary and mints sprigs in them.
  • Mix olive oil garlic and lemon juice and rind and rub over lamb.
  • Salt and pepper lamb and place in slow cooker with stock.
  • Cook 8 hours on low.
  • Remove lamb and rest.Thicken juices with gravy powder.
  • Slice lamb and serve.

    We licked the plates clean!!! MOUTHWATERING!!!! I used a 2.4kg leg as we had friends and their two toddlers as well as us (me, hubby and 2 toddlers) There’s enough leftovers that I’ll make a pie for dinner tomorrow night. The gravy was so good and the recipe makes heaps. Definitely recommend!! I served ours with roasted potatoes, carrots, onions and some steamed broccoli.

  2. This recipe is so easy and absolutely delicious! I’ll never roast lamb in the oven again. It got rave reviews from our visitors. The meat was succulent and delicious.

    This was such an easy one pot dinner. I added potato, carrots, pumpkin and onion. The meat literally fell off the bone. Half way through I did use the tea-towel method. The gravy was rich and delicious.
