Simple Creamy Shredded Chicken Fajitas

Ingredients
 

  • 4-6 chicken breast fillets
  • 2 packets (28g/1oz) fajita seasoning
  • approx 500g jar of chunky salsa (mild/medium or hot according to preference)
  • 150g cream cheese

TO SERVE

  • Tortilla wraps
  • Shredded lettuce
  • Quartered cherry or grape tomatoes
  • Grated cheese

Instructions
 

  • Spray slow cooker with cooking spray. Add chicken breasts to cover base of cooker.
  • Sprinkle seasoning packets over chicken
  • Pour on salsa to cover
  • Cook on LOW until chicken can be easily shredded with 2 forks (between 3-5 hours dependent on your slow cookers quirks)
  • Shred chicken with two forks in the slow cooker bowl
  • Add cream cheese, allow to soften and stir through shredded chicken.
  • Serve by spooning on to tortillas, with your choice of toppings, roll up and enjoy
  • Suitable for 5-7L slow cooker

  1. Great recipe! I used 3 chicken breast (950gms) with one pack of taco seasoning and still the whole jar of salsa. Worked out great – very tasty!

  3. This was a lovely dish, served with salad on tortillas. The salsa I had in the cupboard was mango and mixed with the fajita pack made the chicken mildly sweet & spicy. Yum! Will definitely do this again..
