Sausages, Pork and Beans
A hearty slow cooked casserole/stew, perfect on a cold winter night
Ingredients
- 8 Beef or Pork Sausages
- 1-1.5 kg boneless Pork Roast or Pork Belly, cut into 8 pieces
- 2 slices bacon - approx 1.5cm thick (approx 250g), diced
- 1large Onion, sliced
- 4 cloves Garlic, diced
- 400g tin Cannellini Beans, drained and rinsed
- 400g Passatta
- 1/4 tspn Thyme leaves
- 1/4 tspn Rosemary leaves
- 2 or 3 Bay leaves (depending on size)
- Pinch Cracked Pepper
Instructions
- Place 1/2 the pork in slow cooker bowl
- Add beans over pork
- Add 1/2 the bacon, onion and garlic over beans
- Place sausages on top of onions
- Add remaining bacon, onion and garlic over sausages
- Pour passatta over onions
- Add thyme and rosemary and bay leaves
- Place remaining pork on top
- Sprinkle pepper over pork
- Cook for 8hrs on LOW (Contempo 5.5L sc)
- Remove top pieces of pork to an oven safe tray and place in 200°c oven or under grill to crackle
- Carefully break sausages into bite size pieces and shred remaining pork, gently stir through sauce
- Serve with mashed potato or pasta
