Rustic Lamb Casserole

Classic lamb casserole, packed with chunky vegetables and a delicious sauce just perfect for dunking bread into!

Ingredients
 

  • 1kg diced lamb
  • 4-6 small washed potatoes, skin left on, chunky diced
  • 4 thin carrots, chunky cut
  • 1.5 cups of pumpkin diced
  • 1 cup frozen peas
  • 2 cups liquid vegetable stock
  • 2 tbsp tomato paste
  • 2 tbsp Worcestire sauce
  • 2 tbsp mint sauce
  • 1 tbsp fresh thyme
  • Cracked black pepper to taste

Instructions
 

  • Combine all ingredients in slow cooker.
  • I cooked mine on high for 6hrs in a 5L Breville slow cooker.
  • Could also easily cook 8-10hrs on low.
  • I stirred only twice during cooking so as not to break up all the vegetables.
  • Serve with crusty bread chunks to dunk 🙂

  1. Far too much liquid in this recipe, I’d have the stock if making again, or dust the chops in flour prior to cooking

  3. I loved this recipe. it was easy and tasted great. Didn’t need to add anything else. I used salt reduced stock and mixed all the extra sauces in the second cup of stock before adding to cooker. I liked the amount of liquid, but that’s because I like it being more soupy!

  5. Very easy to prepare, I used the mint sauce even though we don’t like it, but thought I’d give it a go anyway. Next time……no mint sauce hahaha and there was a bit too much liquid, but still it was nice. We still ate the lot though, thank you for the recipe!

    I like to add more meat & veg (I have a family of 6) and a can of diced tomatoes along with celery.

  8. Yummy yummy yummy! Got the thumbs up here. I skipped the mint sauce cause I don’t like it, tossed the meat in flour but still really soupy. Mopped up the extra liquid with some bread which was delish. Next time I’ll use grated potato to thicken up, didn’t know about that trick until now.

  9. I added 1/3 cup cornflour to the stock and thickened beautifully,
    Cooking as we type but smells amazing I did a double batch so maybe a 1/4 cup cornflour would do well .
    And no mint jelly as I don’t have any

  10. This was absolutely delicious! I can’t wait to make it again. I added sweet potato and didn’t add the peas until the end so they stayed really green in colour. I served it with rice and hot dinner rolls. My guests all loved it and went back for seconds. Super easy and extra delicious.

  13. tried this tonight. Just st used lamb offcuts, so super cheap. loved it. I did and so cornflour to the casserole towards the end to thicken it.

  15. This is what you call comfort food or want an easy one pot dish. Halved recipe (only 2 of us) and added some frozen corn with tye frozen peas. Thicken slightly at end with gravy granules. So good.
