Ranch Potatoes

This amazing potato and bacon dish will be a hit for any side dish needs!

Ingredients
 

  • 1kg washed baby red potatoes, skin left on, cut into cubes
  • 2 tsp dried parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried dill
  • 150g diced bacon
  • 2 cups grated cheese
  • 2 Tablespoons fresh chives, diced fine
  • 3-4 Tablespoons ranch salad dressing
  • 3-4 Tablespoons sweet chilli sauce

Instructions
 

  • Add potatoes, herbs and bacon to a large bowl and toss well to coat with herbs
  • Line slow cooker with baking paper and add this potato mix
  • Cook on HIGH for 3.5hrs with tea towel trick in place (or until potatoes are tender in your slow cooker)
  • Add cheese and chives and cook for additional 15mins or until cheese well melted
  • Drizzle across top with ranch and sweet chilli sauces in zigzags
  • We serve this from the slow cooker with a plastic egg flip to lift out serves easily

    Quick and easy recipe the whole family enjoyed it I didn’t have chives i used shallots cut up, will definitely be making this again. I served this along side of coleslaw and southern fried chicken nibbles.

    So had todo it again. It’s the bomb. A great weekend side with anything.

    Tried this for the first time and OMG it was an absolute hit. So full of flavour and the hubby went back for seconds.

    Will definitely be making it a regular on the weekly menu
