Quick & Easy Quiche Squares

Ingredients
 

  • 8 eggs
  • 1/3 cup milk (low fat) or cooking cream (see below)
  • 200g diced bacon (lean, fat trimmed)
  • 2 thin sliced shallots
  • 1/2 fine diced red capsicum
  • 4 small mushrooms diced fine
  • 1/8 red onion diced fine
  • Salt and Pepper to taste
  • -Notes
  • vegetables used can be substituted to suit taste or what you have on hand
  • Substitute milk for cream for low carb version

Instructions
 

  • Whisk eggs and milk together
  • Add all other ingredients
  • Line slow cooker with baking paper
  • Pour mix in and place tea towel under the lid
  • Cook on low for 1-2hrs or until quiche is set (depending on how thick yours is) using tea towel trick under lid
  • Remove using paper to lift out and slice into squares
  • Great for healthy school lunch box treat or a quick meal on the run
  • This mix made approx 24 1" squares

    I made this tonight because I had all of the above ingredients in my home; and personally I was stumped on what to make for dinner. Not only did my hubby LOVE IT but he told me it was the BEST quiche he’s ever had. Not.to be out done by my 6 yr old who licked her plate clean and begged me to make it tomorrow. 10 outta 10 in our home!

  2. Hi, just wondering please if I make this in the Aldi slow cooker ( the white one) would I probably put it on high as this cooker seems to cook very low. Or would I just leave it on low for longer. Thanks so much.

  3. cooked this tonight and unfortunately after an hour I needed to up the heat to high…still runny in centre after 2 hours so finished off for 15 minutes in the oven. Not too sure where I went wrong. I didn’t put any meat in only veges. Tastes good tho!

  4. What a fantastic dish, we love it. The only thing I added was about 1 teaspoon
    of crushed garlic. Having it tonight with salad for dinner, but we had to have a
    sneaky taste. This will stay on the menu for sure love it!!!

  7. Was very tasty indeed. We served with chips and salad and it was a lovely .will definitely make again. My slow cooker is not that hot so I had done 1 hour on low and it was still very funny but then clicked onto high a d it was done in half an hour.

  8. I made this last night, and added a heap of vegies – mushrooms, capsicum, grated zucchini, red onion, baby spinach. I also added a generous handful of cheese along with the other ingredients and used cream instead of milk. It took around 2 and a half hours on high to cook, which would be because of the added ingredients. Very happy with it . I added the baby spinach on top and tried to stir it through which wasn’t very successful as I had baking paper lining my slow cooker to assist me when it came to removing the quiche.
    Every half hour or so I came back to it and used a fork to press the spinach into the egg mixture which assisted with it wilting.
    Once cooked, I grated some more cheese over the top and left that to melt. It is so yummy! I made it with the intention of being an easy breakfast to take to work and heat up and it works perfectly. Thank you – great recipe.

  10. Paulene, when you say thinly sliced shallots, do you mean the tiny brown onion like shallots or are you referring to spring onions? Thanks.

  11. My slow cooker I think is too big to try this for two oo us I like left overs this but might be too much I might try a metal dish inside on top of crunched foil balls. Anyone tried this?

  12. I made this yesterday for the first time , it was so easy and very moist compared to cooking it in the oven .

    I added tomatoes, grated cheese , English mustard and chillies for a little spice ..

    Yummy 🙂

  14. Very easy to make. Very quick around 1.5 hours on high . Very very delicious!!! My version had 8 eggs, cream , ham, cheese, tomatoes, spring onion, and cucumber!! This will now be a weekly regular dish for us as even mr fussy won’t eat anything healthy ate it and lived it! 5/5

  17. It lived up to its name. So quick and so easy. And best of all, very tasty!! 1.5 hours on low. I will definitely do this again!!

  18. Hi. Made this today and tasted wonderful. Only problem we had was when lifting it out the greaseproof paper disintegrated and the quiche broke into pieces. I used a tea towel under the lid but the paper seemed to be wet so it naturally gave way when lifting out. I used a large frying slice to support bottom s I lifted but it didn’t really help as it still broke into a hundred pieces and resembled scrambled egg. Like I said earlier it did taste amazing though. Any suggestions on how to get it out in one piece please?

  19. I’ve just tried this, it was soooooooo easy and it turned out awesome!!! I added some cherry tomatoes & zucchini. I think this is definitely becoming a regular!!!!

  20. Hi Pauline super keen to be trying sc quiche today. I have a multicooker too like the one you reviewed and was wondering if you’ve tried making it in that on sc setting and if it worked well too?

  23. This recipe is is so versatile. I had to leave out the capsicum and onion ( due to my visitors allergies) but added tasty cheese , herbs and salami. Absolutely delicious ?

  24. A winner again. Lots of healthy and handy snacks. I fried mushroom, red onion, bacon, 2 chiilis and capsicum (all diced) in oil with minced garlic, added it to the egg/cream mix and it needed about 1hr45m. Really yummy outcome!!

  26. I made this today and delicious!!! I used 9 eggs because that’s what I had in the fridge, and used thickened cream instead of milk. Red onion, mushrooms, red capsicum, ham, cheese and spring onions and wow!!! You could literally use up all those veges in the bottom of the bin and have a delicious meal.

  27. Such an easy, quick recipe to follow. Made a couple of small adjustments as my family aren’t keen on too many veges in their quiche. Made it with bacon, corn and cheese and a dash of mixed herbs. Cooked for 2hrs on high in a sunbeam sear secret chef lined with baking paper. Was perfect 🙂 gobbled up by the family in no time

    I just bought a 6.5 litre SC from Kmart North Lakes Brisbane for $39 on the weekend. Cooked an amazing Thai Beef Massaman curry which I’ll share soon.
    In the meantime I’m going to make a version of this Quiche recipe this weekend and use up a few vegetables that have been sitting in the fridge for a week or so. Also I’ll give the potato bake you showed on studio 10 this morning.

    Tried this for school lunches and is a hit, have added a bit of salami to the current batch, yet to be taste tested ??Threw in what we had in the fridge and added cheese to the top

    This is an awesome base recipe I have made before. My version today was
    no bacon….used leftover ham about 2 cups diced I think. Didn’t measure. Had 4 sticks of fresh asparagus so chopped that. Added left over salami. 1 tsp garlic, 1/2 cup grated cheese then after 1 hour sprinkled a bit more grated cheese on top. It was so yummy.

    Made this recipe today for easy to grab lunches during school holidays. I had a sneaky taste once cooked and it’s so tasty! Will definitely be making it again
