Pumpkin soup
Serving: 5
Ingredients
- 1 butternut pumpkin de-seeded,peeled and chopped
- 1 onion chopped
- 1 liter chicken stock
- 2 carrots chopped
- 4 potatoes peeled and chopped
- 1-2 tablespoon crushed garlic
- handful of bacon pieces
- thyme
- tarragon
- sage
- rosemary
- mixed Italian herbs
- salt and pepper to taste
- sour cream
Instructions
- Add everything except sour cream cook till tender - 6hrs on low
- Then blitz in a blender till pureed
- If you want it thicker add more cooked potato
- Serve with a dollop of sour cream and crusty bread on the side

I made this today for myself and 9 month old. It was amazing but i used cooking cream instead of sour cream to make it a little smoother for bub. Love the favour and the smokey flavor of the bacon.
