Pumpkin and Red Lentil Soup

A hearty slow cooked soup just like Nan made!

Ingredients
 

  • 2 cups red lentils rinsed
  • 8 cups water
  • 6 cups pumpkin diced
  • 2 onions diced
  • 1 cup carrot diced
  • 2 cup celery plus leaves (trust me it tastes awesome!!)
  • 4 teaspoons garlic
  • Salt and pepper
  • 4 tbls vegetable stock
  • Nutmeg (optional)

Instructions
 

  • Add all ingredients to slow cooker.
  • Cook on LOW for minimum 6 hours (can be left on all day depending on your slow cooker).
  • Blend/Blitz with blender once cooked.
  • Cream or coconut cream can be added or a dollop of sour cream is nice too.
  • But it is nice just as it is!
  • Pumpkin can be roasted before adding if you have the time also.
  • This is my Nan's recipe and we lived on this at her house, so good 🙂
