Potato soup with spring onion

  • 5 small potatoes (cubed)
  • 3 cups of vegetable stock (This is made with water not just the stock)
  • 2-3 pinches of curry powder(optional)
  • Pepper
  • Half of a small bottle of cream
  • Spring onion (it's only for the topping, so don't need much)


  • Peel, wash and cut potatoes
  • Add potatoes,vegetable stock, curry powder and pepper to slow cooker(1.5)
  • Cook on high for 3 hours
  • Blend when cooked
  • Add cream and stir in
  • cut some spring onions and put on top of soup(in the middle)
  • Soup will be really thick, you can add another cup of water if you want it less thick.
