Potato soup with spring onion
Serving: 2
Ingredients
- 5 small potatoes (cubed)
- 3 cups of vegetable stock (This is made with water not just the stock)
- 2-3 pinches of curry powder(optional)
- Pepper
- Half of a small bottle of cream
- Spring onion (it's only for the topping, so don't need much)
Instructions
- Peel, wash and cut potatoes
- Add potatoes,vegetable stock, curry powder and pepper to slow cooker(1.5)
- Cook on high for 3 hours
- Blend when cooked
- Add cream and stir in
- cut some spring onions and put on top of soup(in the middle)
- Soup will be really thick, you can add another cup of water if you want it less thick.
