Potato, Leek & Bacon Soup
A great warming and filling soup for winter!
Ingredients
- 2kg Potatoes, peeled, roughly chopped
- 2 leeks, washed, sliced (white section only)
- 2tsp crushed garlic
- 1tsp onion powder
- 1Ltr Chicken Stock
- Meaty smoked Ham Hock
- Tray of Pork bones (optional)
Optional additions
- Cream and Cheese (see method)
Instructions
- Set slow cooker to sear (if your slow cooker doesn't have this function, use a fry pan)
- Add a little olive oil, and fry off leek
- Change setting to LOW
- Add in garlic, potatoes, bones and hock
- Pour stock over, and cook for around 4 hours on low
- Remove smoked hock and pork/bacon bones, set aside to cool enough for ease of handling
- At this point, I blitz the potato mixture.
- Add meat (removed from bones) back into slow cooker, with a slug of cream (optional), and a good handful of tasty cheese (optional), salt and pepper - heat through, and serve with crusty bread

Is it big slow cooker
The cooker pictured is 5L so I imagine it would serve 4-6
Hubby liked it, it sure made a tonne of soup, could probably have halved the ingredients!
