Pork with Apples and Vegetables
A one pot meal for those nights when you don't want the hassle of side dishes when you get home
Ingredients
- Pork Chops or Pork Belly
- 3 Apples, cut into wedges
- 1/4 Leek, sliced
- 2 large Potatoes, cut into wedges
- 3 carrots, cut into sticks
- 3 parsnips, cut into sticks
- 100mls Vegetable stock or 1/4 tspn Vegetable stock powder and 100mls water
- 200g Beans
NOTE--
- I generally use 1 Pork Chop per person depending on size or approx 1.5kg piece Pork Belly
Instructions
- Place apples and leek in slow cooker bowl
- Add stock
- Add pork, then potatoes, carrots and parsnip on top of pork
- Cook for 6-7hrs on LOW (Contempo 5.5L sc)
- Add beans with approx 1hr remaining

I tried this tonight as I was getting over frying the pork chops. This was great. The meat fell off the bones and my partner wants me to cook it again.
I made this last night and it was really yummy, every cple of hours I did scoop some liquid and spoon over the pork, the apple and leek is great
We had this for tea today and both really enjoyed it (did forget to add the beans so they got thrown in microwave) will definately do this again
Cooked this the other day and had it for tea, was lovely and enjoyed by all definitely make it again
