Pork with Apples and Apple Cider
Serving: 4
Ingredients
- Approx 600g pork belly, cut into 4-6 pieces
- Approx 1kg lean pork ie shoulder, diced
- 2 cloves garlic, crushed (optional)
- 4-6 apples, chopped
- 2 large red onions, sliced
- salt and pepper to season
- 100mls apple cider vinegar
- 500mls apple cider
- Variation
- 500mls apple juice in place of apple cider
Instructions
- Layer onions in bottom of bowl, diced pork, then pork belly.
- Season with salt, pepper and garlic.
- Place the apples on top and around pork.
- Pour the cider vinegar and the apple cider over.
- Cook 6-7hrs on low or 4.5-5.5 hrs on high
Notes
- Works great as a pulled pork using a whole piece of pork, just add a couple of tblspns of Cornflour.
