Pork with Apples and Apple Cider

Ingredients
 

  • Approx 600g pork belly, cut into 4-6 pieces
  • Approx 1kg lean pork ie shoulder, diced
  • 2 cloves garlic, crushed (optional)
  • 4-6 apples, chopped
  • 2 large red onions, sliced
  • salt and pepper to season
  • 100mls apple cider vinegar
  • 500mls apple cider
  • Variation
  • 500mls apple juice in place of apple cider

Instructions
 

  • Layer onions in bottom of bowl, diced pork, then pork belly.
  • Season with salt, pepper and garlic.
  • Place the apples on top and around pork.
  • Pour the cider vinegar and the apple cider over.
  • Cook 6-7hrs on low or 4.5-5.5 hrs on high

Notes

  • Works great as a pulled pork using a whole piece of pork, just add a couple of tblspns of Cornflour.
