Pobs Soup (Potato.Onion.Bacon.Spinach)

Yummy creamy soup ready for those winter blues 🙂

Ingredients
 

  • 1 litre of chicken stock
  • 1/2 litre of beef stock
  • 5 sweet potatoes peeled and cut
  • 2 brushed potatoes washed peeled and cut
  • 1 onion cut anyway
  • 2 handfuls of diced bacon
  • 2 teaspoons of minced garlic
  • Baby spinach leaves
  • 300ml Thickened cream
  • Salt
  • Pepper
  • Chilli flakes
  • Mixed herbs

Instructions
 

  • Turn slow cooker on low
  • Cut up potatoes and onion
  • Add potatoes, onion, bacon, chicken/beef stock, garlic and herbs and spices to slow cooker
  • Cook on low for 7-8 hours
  • With half an hour to go blitz/mash potato until desired consistency ( I like some chunks in mine)
  • Then stir in the spinach and cream, pop the lid back on for the last half an hour then serve and enjoy 🙂

Notes

  • For a more thicker soup, drop it to 1/2 cup of beef stock and 1/2 cup of chicken stock and do the handy tea towel trick 🙂

  1. Yum! Extremely tasty soup! I only used 2 large sweet potatoes but halved the chicken stock, it was beautiful! I usually blend my soup but I mashed this as suggested and it was perfect. Will definitely make again… it was like a warm hug!
