Pobs Soup (Potato.Onion.Bacon.Spinach)
Yummy creamy soup ready for those winter blues 🙂
Serving: 7
Ingredients
- 1 litre of chicken stock
- 1/2 litre of beef stock
- 5 sweet potatoes peeled and cut
- 2 brushed potatoes washed peeled and cut
- 1 onion cut anyway
- 2 handfuls of diced bacon
- 2 teaspoons of minced garlic
- Baby spinach leaves
- 300ml Thickened cream
- Salt
- Pepper
- Chilli flakes
- Mixed herbs
Instructions
- Turn slow cooker on low
- Cut up potatoes and onion
- Add potatoes, onion, bacon, chicken/beef stock, garlic and herbs and spices to slow cooker
- Cook on low for 7-8 hours
- With half an hour to go blitz/mash potato until desired consistency ( I like some chunks in mine)
- Then stir in the spinach and cream, pop the lid back on for the last half an hour then serve and enjoy 🙂
Notes
- For a more thicker soup, drop it to 1/2 cup of beef stock and 1/2 cup of chicken stock and do the handy tea towel trick 🙂

Can leftovers be frozen?
Yum! Extremely tasty soup! I only used 2 large sweet potatoes but halved the chicken stock, it was beautiful! I usually blend my soup but I mashed this as suggested and it was perfect. Will definitely make again… it was like a warm hug!
