Pobs Soup (Potato.Onion.Bacon.Spinach)

Yummy creamy soup ready for those winter blues 🙂

  • Prep: 10 mins
  • Cook: 7 hrs 30 mins
  • Yields: 7 servings


1 litre of chicken stock

1/2 litre of beef stock

5 sweet potatoes peeled and cut

2 brushed potatoes washed peeled and cut

1 onion cut anyway

2 handfuls of diced bacon

2 teaspoons of minced garlic

Baby spinach leaves

300ml Thickened cream



Chilli flakes

Mixed herbs


1Turn slow cooker on low

2Cut up potatoes and onion

3Add potatoes, onion, bacon, chicken/beef stock, garlic and herbs and spices to slow cooker

4Cook on low for 7-8 hours

5With half an hour to go blitz/mash potato until desired consistency ( I like some chunks in mine)

6Then stir in the spinach and cream, pop the lid back on for the last half an hour then serve and enjoy 🙂


1For a more thicker soup, drop it to 1/2 cup of beef stock and 1/2 cup of chicken stock and do the handy tea towel trick 🙂

Yum! Extremely tasty soup! I only used 2 large sweet potatoes but halved the chicken stock, it was beautiful! I usually blend my soup but I mashed this as suggested and it was perfect. Will definitely make again… it was like a warm hug!
