Plum Cobbler

Plum Cobbler

March 16, 2015

  • Prep: 20 mins
  • Cook: 1 hr 30 mins
  • Yields: 4 - 6 people

3/4 cup plus 2 tbs white sugar

10 fresh plums sliced (approx. 4 cups)

2tbs cornflour

1/4tsp cinnamon

1 cup flour

1 1/2tsp baking powder

1/4 cup butter (50g)

1/4 cup milk

1 egg, lightly beaten

1In a large bowl, combine 3/4 cup sugar, plums, cornflour and cinnamon. Place fruit mix in slow cooker. I used a 3.5 litre slow cooker.

2In a medium bowl, combine the remaining 2tbs sugar, flour, baking powder and salt. Cut the butter in with a fork or pastry blender until the mixture resembles coarse breadcrumbs. Stir in the milk and egg until just moistened.

3Drop batter on the fruit. I used a dessert spoon and randomly plonked spoonful's on top of the fruit.

4Cook on HIGH for approx. 90mins.

5Serve with custard, cream or ice cream.

It’s not my own recipe but I’d just add a pinch at most 🙂
