Plum Cobbler
Serving: 4
Ingredients
- 3/4 cup plus 2 tbs white sugar
- 10 fresh plums sliced (approx. 4 cups)
- 2tbs cornflour
- 1/4tsp cinnamon
- 1 cup flour
- 1 1/2tsp baking powder
- 1/4 cup butter (50g)
- 1/4 cup milk
- 1 egg, lightly beaten
Instructions
- In a large bowl, combine 3/4 cup sugar, plums, cornflour and cinnamon. Place fruit mix in slow cooker. I used a 3.5 litre slow cooker.
- In a medium bowl, combine the remaining 2tbs sugar, flour, baking powder and salt. Cut the butter in with a fork or pastry blender until the mixture resembles coarse breadcrumbs. Stir in the milk and egg until just moistened.
- Drop batter on the fruit. I used a dessert spoon and randomly plonked spoonful's on top of the fruit.
- Cook on HIGH for approx. 90mins.
- Serve with custard, cream or ice cream.

How much salt?
It’s not my own recipe but I’d just add a pinch at most 🙂
