Overnight Breakfast

  • 1 bag frozen hash browns
  • 6 thick beef sausages ( I lightly browned them and then sliced long ways)
  • 6 diced shallots
  • 12 eggs
  • 1 cup grated cheddar cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup milk
  • Salt and pepper. ( I add spices too sometimes)


  • Spray your slow cooker.
  • Place half the frozen hash browns on the bottom of a large slow cooker.
  • Layer half the sausage , half the cheeses and half the onions . Then repeat , hash browns ,sausage , cheeses and onions.
  • Whisk together eggs, milk and salt and pepper , drizzle over the top.
  • Cook on low 8 hours overnight.

    Yum! Everyone at my staff breakfast loved this.
    I loved having a recipe that I could put on at night and serve at breakfast. The flavours worked well together. I added diced bacon to the top as an extra. I didn’t brown the sausages or bacon, next time I will.
