One Pot Chicken Dinner

A simple, ready to serve one pot meal. This has become a go-to meal for those nights when we are going to be late and just want to serve and eat.

Ingredients
 

  • 1kg Chicken, any cut you choose
  • 500g Small Potatoes, cut in quarters
  • 2 Carrots, cut in batons
  • 1 Leek, sliced
  • 100g Green Beans, fresh
  • 2 Bay Leaves
  • 6 Sprigs Thyme, remove leaves and discard stems
  • 3 Garlic cloves
  • 1/2 cup Cream
  • 1 Cup Chicken Stock
  • 2 tblspns Cornflour
  • Pinch Cracked Pepper

Instructions
 

  • Place potatoes, carrots, leek, garlic, thyme and bay leaves in slow cooker bowl
  • Combine cream and cornflour together
  • Pour cream mixture and stock over vegetables
  • Place chicken pieces on top of vegetables, sprinkle with pepper
  • Cook on LOW ( Contempo 5.5L sc) for 6-7hrs
  • Add beans with about 1hr remaining

Notes--

  • We have used breast fillets, thighs, cutlets and marylands
  • Garlic can be left whole, sliced, minced however you prefer
  • Lactose free cream can be used
  • I have added butternut chopped in cubes with the beans before as well
  • A great way to use up vegetables that need using

  1. Oh this is great!!! I used 8 chicken thighs on the top, and lifted them with an hour to go to put the beans underneath. The cream had split so I poured in about another half cup of cream and it all came back together and was just lovely. Thank you!

  2. Winning! Cooked this for the first time last week and have requests to cook it again and work friends are asking for the recipe. Added corn kernels with the beans. Simple and tasty meal that is even tastier the day after cooking.

  3. We enjoyed this recipe.
    I made a half recipe and went a bit lighter on the cream which l only used to mix with the cornflour and added with about an hour to go.
    I used what the garden was growing in the veg line. So baby carrots, leek, whole baby pea pods and sweet potatoes.
    Very yum and it will be rotated with the sticky french chicken recipe for regular chicken meals.

  4. Loved the fact it was just a one pot meal which made it for a quick and easy tea and a quick clean up. But the meal itself was not very enjoyable at all, it was just lacking flavour we found it to be bland
