One Pot Beef Dinner
A creamy all in one beef stew that is perfect on a cold winters day
Ingredients
- 1kg Eye Silverside, sliced in 3-5cm thick rounds
- 600g Small Potatoes, cut in quarters
- 300g Sweet Potato, diced
- 2 Carrots, cut in batons
- 1 large eschalot , diced
- 2 Spring Onions, sliced
- 6 Garlic cloves
- 350g Mushrooms, quartered
- 100g Green Beans, fresh
- 3 Bay leaves
- 1 cup Beef stock
- 1/2 cup Cream
- 2 tblspns Cornflour
- Pinch Cracked Pepper
Instructions
- Place potatoes, sweet potatoes, carrots, spring onions, shallot, garlic, bay leaves and mushrooms in slow cooker bowl
- Combine cream and cornflour together, pour cream mixture and stock over vegetables
- Place beef pieces on top of vegetables, sprinkle with pepper
- Cook on low (Contempo 5.5L sc) for 8-9hrs
- Add beans with about 1hr remaining
Notes--
- Garlic can be left whole, sliced, minced however you prefer
- Lactose free cream can be used
- A great way to use up vegetables that need using
