Chicken and Minestrone Soup
Serving: 6
Ingredients
- 4 chicken marylands, boiled, deboned
- 2 large carrots
- 4 medium potatoes
- 1/4 of a butternut pumpkin
- 2 onions
- 1 heaped tablespoon of powdered chicken stock
- 1 jar of pasta sauce
- 1 parsnip
- 1 turnip
- 1 swede
- 1 large stalk celery
- 1 can of baked beans
- 2 medium sweet potatoes
- Salt and pepper
- 1/2 cup of sweet chilli sauce
- 250g shell pasta
Instructions
- Put deboned cooked chicken in slow cooker
- Dice all vegetables and put in slow cooker
- Add baked beans, pasta sauce, sweet chilli sauce and salt and pepper
- Cook on low for 6 hours
- In the last hour add 250g pasta shells
- Notes: Can leave out sweet chilli sauce or add other vegetables

Although The recipe refers to a jar of pasta sauce the directions don’t mention it at all. I assume it goes in with the beans.
Yes I believe you are right so I’ve added it 🙂
I added 4 cups of stock. I found it too spicy so next time I would leave out the sweet chilli sauce. Overall, a delicious soup.
