Chicken & Minestrone Soup

4 chicken marylands, boiled, deboned

2 large carrots

4 medium potatoes

1/4 of a butternut pumpkin

2 onions

1 heaped tablespoon of powdered chicken stock

1 jar of pasta sauce

1 parsnip

1 turnip

1 swede

1 large stalk celery

1 can of baked beans

2 medium sweet potatoes

Salt and pepper

1/2 cup of sweet chilli sauce

250g shell pasta


1Put deboned cooked chicken in slow cooker

2Dice all vegetables and put in slow cooker

3Add baked beans, pasta sauce, sweet chilli sauce and salt and pepper

4Cook on low for 6 hours

5In the last hour add 250g pasta shells

6Notes: Can leave out sweet chilli sauce or add other vegetables

I added 4 cups of stock. I found it too spicy so next time I would leave out the sweet chilli sauce. Overall, a delicious soup.

Although The recipe refers to a jar of pasta sauce the directions don’t mention it at all. I assume it goes in with the beans.
