Muesli carrot loaf
A spin on a traditional carrot cake
Serving: 12
Ingredients
- 125 grams butter
- 2 tablespoon of golden syrup
- 1/2 cup brown sugar
- 2 cups muesli (of your choice)
- 1 1/2 cups wholemeal sr flour (can use white)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 cups grated carrot
- 1/4 cup brown flax seeds
- 1 teaspoon of vanilla extract
- 2 eggs
Instructions
- Add butter, brown sugar and golden syrup to a microwave bowl
- Microwave on high in burst of 30 seconds until butter melted stirring each time
- Set to one side
- In large bowl add muesli, flour, cinnamon, nutmeg, carrot and flax seeds
- Mix to combine
- Add vanilla to melted butter and whisk in 2 eggs
- Add wet ingredients to dry ingredients and fold through until mixed
- Place in lined slow cooker or loaf tin
- Tea towel under lid
- Cook on high for 2 hours or until cooked
- This is a really thick mixture so don't be alarmed.
- Cooked in Aldi 3L.

Made this yesterday, it was amazing. I forgot the flax seeds so used walnuts instead and used apple cinnamon Granola instead of muesli… Coz I already had that in the cupboard. Sooooo good with cream cheese icing on top and in the middle
