Mini Meringues

I decorated mine with cream & pink & blue sprinkles, to take to a gender reveal.

6 egg whites

1 & 1/4 cup caster sugar

2 tsp corn flour

1 tsp vinegar

1 tsp vanilla essence

Few drops of food colouring


1Whisk egg whites, until soft peaks form, gradually add sugar, 1 tbsp at a time, well after each addition.

2Mix until meringue is thick & glossy, until all sugar is dissolved.

3Add corn flour, vinegar, & vanilla, & whisk until just combined, add a few drops of food colouring.

4Put in slow cooker, lined with baking paper, tea towel under lid, cook on low for an hour & a half.

5Leave in slow cooker until completely cold.
