1kg of washed potatoes, skin on
1kg beef mince
1 x 40g sachet Taco/Mexican seasoning
1 x 435g refried beans
2 cups grated tasty cheese
Optional: Sour cream to serve
1Roughly chop washed potatoes into sections approx. the size of half a golf ball each
2Cover base of 5L slow cooker with these potato pieces
3In a large bowl combine mince, seasoning and refried beans and mix well
4Add mince mix over potatoes and smooth top to flat
5Cook on low for 6hrs
6In the final 15mins add grated cheese to melt over top
7Serve with a dollop of sour cream for a one pot Mexican meal

Tried this tonight, it was a bit dry ( could have been my slow cooker) flavour was great. All of the family would like veg mixed through the mince so I will put some in next time

So easy and so tasty. I halved everything and used chicken mince. Yummy. Would make a great pie filler 😊

You could and they would cook to soft a little faster than regular potatoes. I’d drop an hour or so off time 🙂

Could I use sweet potatoes instead and would that change the cooking time? Thanks

They give a depth of flavour to this dish and a creamy consistency that really makes it 🙂 You won’t taste them individually in the final dish. Why not give it a go 🙂
