Massaman Chicken Curry
Quite a sweet curry can substitute chicken for beef and coconut milk for Greek yogurt if preferred.
Serving: 4
Ingredients
- 1 kg chicken drumsticks
- 1 potato diced
- 1 onion diced
- 1 cup diced pumkin
- 1 400ml coconut cream
- 1/2 jar massaman curry paste
- 1/2 block of frozen spinach
- Salt n pepper to taste
Instructions
- Brown chicken in large fry pan (optional) and place in slow cooker.
- Fry off onion add potato and pumpkin and cook for 2 minutes.
- Turn heat down and add massaman paste for 2 mins then stir through coconut milk and cook for another minute.
- Tip into slow cooker season with salt and pepper.
- Cook on low until 4-5 hrs until chicken falls off the bone.
- Pick out and discard bones.
- 30 mins before serving add spinach and stir through.
