Massaman Beef Thai Curry

Ingredients
 

  • 1kg or more beef
  • 1x 120grm jar of Massaman curry paste (I used valcoms)
  • 1x 400ml Canned coconut milk
  • 1 cup chicken liquid stock
  • 4 tablespoons brown sugar
  • Juice of a lemon
  • 3 medium potatoes
  • 1 large onion
  • 2 bay leaves
  • 4-5 cardamon pods
  • 1 cinnamon stick

Instructions
 

  • Chop up beef, onion and potatoes into large chunks add to slow cooker.
  • In a large mixing bowl add in the paste, coconut milk, chicken stock, brown sugar and lemon juice. Stir until combined then pour over the beef, potato and onion.
  • Crack open the pods to release fragrance and place into the slow cooker with the bay leaves and cinnamon stick.
  • Cook on high for 6 hours stirring occasionally
  • Serve on a bed of rice.
  • Please note don't eat the pods, cinnamon stick or bay leaves -remove before serving

  1. This is a really nice dish, 6 hours was perfect for me, I think it needs some salt or fish sauce to be added as well as it was lacking that salty taste, but I think thats personal preference. I will make this again with the extra salt or fish sauce and some chopped roasted peanuts.

  2. I used this recipe today and although it was a little oily it turned out really good. I will admit though, I had to substitute some of the ingredients as I didnt have some of them on hand. I also added some fish sauce as I felt it needed it. Personal preference really. Thanks for sharing

  3. A really tasty dish the whole family devoured. I added some salt base on previous reviews at the beginning and a little more at the end. I also put cashews in st the end and served with rice and naan bread. A family hit!

  4. I love this recipe one of our staples now . I only use half jar paste but other than that perfect. Making it today again

  5. The beef was perfectly tender but the sauce lacked flavour other than sugar. I followed the recipe to the tee. Next time use much less sugar and perhaps add some fish sauce as others have in previous posts.

  6. Followed this recipe to the tee, and it wasn’t anywhere near as tasty as hoped (to the point we ordered pizza). I have a go-to Massaman Curry I use in the books, but I lent them to my mother in law so I tried this one instead. It could be just the fact that we’ve never used cardamon before!

  7. Inspired to make a Thai creation at home & this recipe ihas all the flavour even better than the takeaway variety and much more budget friemdly loved it!
    I modified recipe by using the whole jar 210g Valcom curry paste but otherwise followed the recipe exactly
