Equipment

  • 3L Slow Cooker
  • Fry pan

Ingredients
 

  • 750 grams chicken thigh fillets, cut into strips
  • 1 tbsp butter
  • 2 tsp minced garlic
  • 300 ml cooking cream – see notes below
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp ground paprika
  • 1 tbsp chicken stock powder – I always use this Massel brand
  • salt and pepper to season
  • 10 large fresh basil leaves, cut into thin strips (+ extra to garnish)
  • 200 grams sundried tomato strips, (drain oil well on paper towel)
  • 1/2 cup shaved parmesan cheese (+ extra to garnish)

Instructions
 

  • In a frying pan heat butter and add minced garlic and chicken strips.
    Cook on high heat for 5-10mins to brown/seal chicken (see notes below)
    Add to slow cooker
  • Combine all other ingredients, except the cheese, and pour over chicken. Stir to combine.
  • Slow cook on low for 3hrs with Tea Towel Trick in place
  • Stir in cheese in the final 30mins of cooking time
  • Garnish with a little extra cheese and small fresh basil leaves
  • NOTES:
    Cooking cream is available in cold or shelf packs in supermarkets. It resists splitting when heated. If you must use regular cream in this recipe then add a tsp of cornflour to it first to help lesson the risk of that splitting.
    While the browning step gives a lovely colour to the final dish, it could be skipped if you prefer. If you do not pre brown the chicken then add an extra 30-40mins to your slow cooking time

    Thanks Paulene we absolutely loved it! Feedback from around the table was ‘this is amazing’ and a big thumbs up from the teenager. I served it with tagliatelle pasta and garlic bread. Next time I will be doubling the sauce and adding more chicken because there were no left overs. 🙁

    Oh my gooooooosh! This recipe is delicious!
    We had ours on pasta but next time I’d love to try it on some mash with a crunchy side salad perhaps. I’m pretty sure that no matter how you decided to have this dish, it would be amazing because that’s how delicious it is.

  3. The delicious flavours of creamy sundried tomatoe and the herbs are just perfect. definatly be on the favourites menu. Double the ingredients if you have a big family.

    Very tasty. Hubby asked if there were seconds before he’d finished! Easy store cupboard recipe for me so will definitely be making again. Served with pasta & veggies but could easily serve with rice or mashed potato.
