Luau Chicken
Serving: 4
Ingredients
- 1.5kg diced chicken breast
- 1/2 cup cornflour
- 1 tbsp brown sugar
- 1 tsp all purpose seasoning
- 1 red capsicum, sliced into strips
- 1 425g can pineapple pieces, drained
- 250g diced bacon
- 1 425g bottle Honey BBQ Sauce
Instructions
- Spray slow cooker with cooking spray.
- Add sliced capsicum to slow cooker.
- Dust chicken lightly in cornflour and add to slow cooker
- Sprinkle with brown sugar and seasoning
- Cover with bacon and pineapple
- Pour sauce evenly over dish
- Cook for 2 hours on HIGH, stirring twice, and then a further 1-2 hours on LOW
- Serve with potatoes, noodles or rice and salad
- Cooked in 7L Breville Flavour Maker

this recipe is amazing .. I had to tweek it a bit because I couldn’t find BBQ honey sauce. So I used a hickory and brown sugar sauce and added a spoon of honey I did leave out the brown sugar didn’t need it with the sauce I used

I have just finished preparing this meal. I do love meals with pineapple in them so this was a must do. I used a teaspoon of Maggie seasoning to give it a slight Asian flavour. Great looking recipe so can’t wait to try it. Thanks for your contribution.
