Lemon Self-Saucing Pudding
Serving: 6
Ingredients
- Cake mixture:
- 1/2 cup sugar
- 50gm butter
- 2 cups SR flour
- 2 teas grated lemon rind
- 1 teas lemon essence
- 3/4 - 1 cup milk
- Sauce:
- 2 cups boiling water
- 1/2 cup lemon juice
- 1/2 cup sugar
Instructions
- Cake:
- Beat butter and sugar together, add flour, milk, and lemon rind. Combine and pour into 3 litre slow cooker
- Sauce:
- Mix water, lemon juice and sugar together and gently pour over cake mixture.
- Cook on high with tea towel under lid for 1 1/2 - 2 hours. Once cooked, switch off SC and Let stand for 5 - 10 minutes to allow sauce to thicken before serving.

When is the lemon essence added?
This was so easy and delicious! The whole family loved it and I’m making it a 2nd time this week for my daughter’s friend who heard all about it.
We didn’t use the lemon essence as we didn’t have any and it didn’t make any difference the real lemon zest and juice was plenty
