Lemon Self Saucing Pudding
Serving: 4
Ingredients
- Cake
- 1/2 c sugar
- 50g butter
- 2 c self raising flour
- 2 t lemon rind
- 3/4 cup milk
- Sauce
- 2 c boiling water
- 1/2 c lemon juice
- 1/2 c sugar
Instructions
- Beat butter & sugar together, add flour, milk & lemon rind.
- Combine and pour into 3 litre slow cooker.
- Sauce
- Mix water, lemon juice, & sugar together and gently pour
- Over cake mixture.
- Cook on high with tea towel under lid for 1 1/2 - 2 hours.
- Once cooked turn off sc and let stand 5-10 mins to allow
- Sauce to thicken before serving.

The recipe says 2 t lemon rind, is that tablespoon ?
t is teaspoon and T is tablespoon 🙂
Made this tonight only change was gf flour (rice flour and tsp baking powder) cooked for 1 hour 10 mins inserted skewer came out clean. Will def make again yum
I only have a large slow cooker. Could I put it in a dish inside the sc.
Can I make this in a 1.5L cooker?
I believe it would need 3.5L range rather than the 1.5L which I feel would be too small?
