Lemon grass pork curry

2x 10cm sticks of lemon grass chopped coarsely

3 coves of garlic quartered

4cm piece of fresh ginger grated

1 small red chilli deseeded and sliced finely

1 teaspoin ground turmeric

1/2 teaspoon ground cumin

1/4 teaspoon ground cardamom

3 fresh kaffir lime leaves shredded thinly

1 red onion diced

1/2 cup water

1 kilo pork neck chopped coarsely

1 tin of coconut milk

1 egg plant cubed

2 carrots cut into sticks

1 tablespoon of fish sauce

2 tablespoons of lime juice

1/4 leek sliced

1/2 red capiscum cut roughly


1Blend or process lemon grass, garlic, ginger, chilli, lime leaves, chilli, water and the rest of spices until mixture is smooth.

2Place everything in slow cooker and cook on low for 6 hours

Disappointingly flavorless and watery. Wouldn’t recommend or make again.
