Leek and potato soup
Slow Cooked Soup
Serving: 4
Ingredients
- 1 leek chopped
- 6 large potatoes diced
- 1 onion diced
- 1T butter/marge
- 1L chicken stock
- 500ml cream
- Salt and pepper
Instructions
- 1. Melt butter
- 2. Sautée onion till soft
- 3. Add leek an saute till soft
- 4. Add potato and stock
- 5. Cook for 2 hours on high or 4 hours on low
- 6. Drain 1/2 liquid
- 7. Purée vegetables
- 8. Add cream and mix well
- 9. Add salt and pepper to taste

Hi Pauline, I would like to make this soup and freeze it in portions – do you have a suggestion about the cream as I’m worried it will split? Or do you have another recipe suggestion for potato and leek soup that doesn’t include cream please?
I used3 potatoes instead of 6 , added a cauliflower and didn’t drain any liquid, it was perfect. So creamy and so good.
