Slow cooked yum!
6 hrs 20 mins
1kg diced lamb
1/2 jar of Pataks rogan josh curry paste
1 tbls olive oil
2 onions sliced
3 medium potatoes peeled and diced
2 carrots peeled and sliced
300ml coconut cream
3 tbls brown sugar
1 cup beef stock
400g tin diced tomatoes
2tbls ground coriander
1 tbls ginger
1Heat oil and cook onions till soft add curry paste and stir for 30 secs until fragrant.
2Add lamb until just brown.
3Add to slowcooker bowl.
4Add all other ingredients and stir to combine.
5Cook on low for 6 hours.
6Thicken with a little cornflour if needed.
7Serve with rice and naan bread,coriander leaves and a few peanuts

Lovely dish, we used slightly more coconut cream due to tin size, next time I’d either use less or thicken it up at the end. Nice flavours.
