Slow cooked yum!
Serving: 6
Ingredients
- 1kg diced lamb
- 1/2 jar of Pataks rogan josh curry paste
- 1 tbls olive oil
- 2 onions sliced
- 3 medium potatoes peeled and diced
- 2 carrots peeled and sliced
- 300ml coconut cream
- 3 tbls brown sugar
- 1 cup beef stock
- 400g tin diced tomatoes
- 2tbls ground coriander
- 2tbls garlic
- 1 tbls ginger
Instructions
- Heat oil and cook onions till soft add curry paste and stir for 30 secs until fragrant.
- Add lamb until just brown.
- Add to slowcooker bowl.
- Add all other ingredients and stir to combine.
- Cook on low for 6 hours.
- Thicken with a little cornflour if needed.
- Serve with rice and naan bread,coriander leaves and a few peanuts

Lovely dish, we used slightly more coconut cream due to tin size, next time I’d either use less or thicken it up at the end. Nice flavours.
Made this with lamb shank meat, didn’t brown first – just through everything in and cooked for 7 hours on low. Absolutely yummy!
are the garlic and ginger the ground powder or the minced garlic and ginger in the jar?
Given the amounts I would say fresh/jar, not the powder kind
Made this, but used beef instead. Will definitely make this again
