Lamb Ragout
Serving: 4
Ingredients
- 2 carrot, chopped
- 1 brown onion, sliced
- 1 large celery stick, chopped
- 2 teaspoons crushed garlic
- 1kg large good quality lamb chops
- 2 dried bay leaves
- 1 tablespoon Italian herbs
- 1/4 cup red wine vinegar
- 410g tomato purée
- 1 teaspoon brown sugar
- Parmesan, shaved, to serve
Instructions
- Put all ingredients in slow cooker. Cook on low with lid on 8-10hrs.
- Sprinkle with Parmesan cheese.
- Serve with mash potato
