Kusundi
Ingredients
- 3 kg tomatoes
- 375gms sunflower oil
- 135gms black mustard seeds
- 45gms Turmeric
- 135gms Cumin Powder
- 20gm chilli powder ( this can be more if you like it very hot)
- 375gms fresh ginger
- 190gms chillies
- 190gms Garlic
- 400mls malt vinegar
- 375gms Brown sugar
- 30gms salt
Instructions
- Roughly chop tomatoes and set aside, puree ginger, garlic and chillies with 100mls of the vinegar.
- Heat oil and and fry mustard, turmeric, cumin and chilli powder, add pureed ingredients cook cook for 5 minutes.
- Use the saute or do this on the stove top this will release the flavours.
- Add tomatoes, salt, rest of vinegar and sugar.
- Cook on high
