  • 3 kg tomatoes
  • 375gms sunflower oil
  • 135gms black mustard seeds
  • 45gms Turmeric
  • 135gms Cumin Powder
  • 20gm chilli powder ( this can be more if you like it very hot)
  • 375gms fresh ginger
  • 190gms chillies
  • 190gms Garlic
  • 400mls malt vinegar
  • 375gms Brown sugar
  • 30gms salt


  • Roughly chop tomatoes and set aside, puree ginger, garlic and chillies with 100mls of the vinegar.
  • Heat oil and and fry mustard, turmeric, cumin and chilli powder, add pureed ingredients cook cook for 5 minutes.
  • Use the saute or do this on the stove top this will release the flavours.
  • Add tomatoes, salt, rest of vinegar and sugar.
  • Cook on high
