Jacket Potato/Baked Potatoes

Ingredients
 

  • As many potatos as you need (I only do 1 layer)
  • 2 tablespoons of olive oil
  • Filling of your choice (cheese/sourcream/garlic butter/bolognaise sauce)

Instructions
 

  • Wash the potato, but leave the skin on
  • Lightly rub with olive oil
  • Prick the potatoes with about 4 -5 knife pricks
  • Lightly spray aluminum foil with spray
  • Wrap each potato in the foil
  • I place a small rack inside my slow cooker and then place the potatoes on top of the rack
  • I then put about an inch of water in the bottom, I do check the water level while it's cooking
  • I cook them for 4:15 on high

Notes

  • Fill them with your own choice of fillings
  • I used a 5.5 Litre Contempo Slow Cooker which cooks fast
  • All slow cookers cook at different temps, and potatoes may take longer in some
  • Check with your manual if you can 'dry-cook' your slow cooker. I prefer to place the water in the bottom, and elevate the potatoes
  • You can top your potatoes with whatever you choose.

  1. what size potatoes do you cook? I am interesting in cooking large potatoes in my slow cooker but have not tried it yet. Thanks for the receipe.

  2. Brenda, My potatos were slightly larger than tennis balls, so if you use larger potatoes, then you will need to add more cooking time.

  3. Could you put them on low for longer? If so how long would you suggest- plus I’d need to use my keep warm function, would it still work ok

    Best jacket potatos ever! I don’t have a wire rack so instead put about an inch of water on the bottom of bowl and some foil balls then put the potatos on top

  5. I cooked mine 9 hours on low, wrapped in foil, no water, no tea towel under lid and they were perfect.
    My potatoes were quite large but varying in sizes but they were all cooked perfectly. I used Kennebecs.

  6. They are the best potatoes! So creamy. Once cooked I sprinkled some garlic powder on them, added some bacon, capsicum, shallots and tasty cheese then popped them back in the slow cooker to melt the cheese. A dollop of sour cream topped off my very tasty dinner ?

    I did this in my 1.5L SC one medium potato & 2 small ones (for lunch tomorrow). I used a little bowl to lift the out if the water and put them on low for 8+ hours while I was at work. came home to lovely, fluffy potatoes
