Honey Balsamic Lamb Shanks
Makes a sweet, spicy sauce for lamb shanks or any other slow cooked meat with bone in
Ingredients
- 2 lamb shanks (rolled/rubbed in any good spice rub the night before, this is not necessary but adds lots of flavour)
- 1 can of tomatoes
- 1 medium onion finely chopped
- 1 tbsp. fresh thyme
- good pinch dried oregano
- 2 small Thai chillies chopped
- 75ml Balsamic
- 40ml Honey
- 3 cloves garlic
- cracked pepper (don't add salt as balsamic is usually enough, can always add later to sauce if required)
Instructions
- Brown lamb shanks on all sides over medium heat (not too hot or will burn the spices) and set aside
- Add good splash of olive oil to the pan and add the Garlic, onions, chilli, herbs and pepper, sauté till onions translucent and
- add the honey, balsamic for 30seconds then add the can of tomatoes and remove from the heat as soon as it starts to simmer/bubble
- Throw it all in the slow cooker and cook for 8hrs on low (4 hours high but low gives better results)
- After 8 hours, remove lamb and foil to keep warm, add sauce to a saucepan over medium high heat and reduce (add corn flour/water if you want it thicker)
- Server with good splash of reduced sauce and favourite veg (Roasted or mashed potato/sweet potato and steamed broccolini works well)

Absolutely delicious!! We had left over sauce and decided to put it on lamb chops the next day for dinner. Will definitively be using this one again.
Last nights dinner and not disappointed at all, Lovely meal and went down quite well.
Next time, I might see how it goes with golden syrup, that seems to be a pretty good substitute for honey that I found and adds a great flavour.
I am glad I found this website, some absolutely stunning meal ideas and instructions.
Don’t take the 4 stars as an insult, a meal has to be pretty special to get top billing from me, this is up there with the best so far.
