Hearty beef casserole/stew
A hearty vegetable packed beef stew
Serving: 6
Ingredients
- 500g Diced beef
- 1 onion
- 2 celery stalks
- 2 potatos
- 1 sweet potato
- 1 leek- white part
- 1 carrot
- 1 tin of champignons
- 2 garlic cloves
- A Sprinkle of onion powder; ground cumin; ground coriander
- Salt pepper
- 1 litre beef stock
- Fresh parsley finely chopped
- 1 tin of diced tomatoes
- 1 tablespoons of tomato paste
- 1 tablespoons of worcesteshire
- Half a packet of French onion soup
Instructions
- Prepare vegetables
- Place beef and vegetables in slow cooker
- Combine all spices, stock and sauces then cover meat and vegetables!
- Mix together, cover and place on high for 4-5 hours depending on slow cooker!

Cooked this tonight and will make again. Very tasty. Might not put as much liquid in next time.
Came out really well and my husband and toddler loved it. I only used 500ml of water and it was fine so I agree that less liquid is required. Thanks to Justine for the heads up.
Love love love, though as others have said less liquid and I added whichever veggies my family eat
