Directions
1Whisk eggs in large bowl
2Combine all other ingredients and fold through eggs
3Line slow cooker with non stick baking paper
4Pour in egg mix and cook with tea towel under lid on HIGH for 1hr 30mins in my 5L Breville
6Cooking times may vary so test that egg is cooked through before removing.
7Lift up and out by baking paper and slice to serve.
8Delish with a side salad and coleslaw or sliced into squares for lunchboxes or party bites.

What other vegetable can I use. I have a husband who doesn’t like capsicum.

Used 12 eggs and 3 ham steaks cooked with tea towel under lid on high 2hrs.
Light fluffy & filling. Cut into small slices as made for work for team lunch to share.

Cooked this tonight was sceptical it would turn out nice,WOW was I surprised. Forgot the tea towel but all was ok.

I made this for the first time tonight, we enjoyed it but perhaps a bit of salt and pepper added before cooking would be good – as per my husband. I will make this again, quick and easy and could be used for dinner with chips or salad or cold in the lunchbox. I will also make it as a party food (cut into finger food pieces) next week for my daughters birthday.

I’d try 3hrs at a guess
It will depend on how deep it is in your slow cooker as to when it sets all the way through so just check as you go along
