Greek Style Lemon & Herb Lamb Leg
Greek inspired slow cooked lamb leg. So tender it falls off the bone!
Serving: 6
Ingredients
- 2-2.5kg leg of lamb (shoulder also suits)
- 1 x bunch flat leaf parsley
- 1/2 cup fresh oregano or 3tbsp dried
- 1/4 cup fresh rosemary or 1&1/2 tbsp dried
- 6 cloves garlic
- 1/3 cup olive oil
- 1tbsp salt
- 1tbsp peppercorns
- 2 red onions slices
- 2 lemons sliced
Instructions
- Blend all herbs, spices and olive oil until a pesto like paste has been formed.
- Line bottom of slow cooker with sliced onions and half of lemon sliced.
- Score lamb leg deeply on both sides. Rub Herb blend all over leg and place in slow cooker on top of lemon and onions slices. Place other half of lemon slices on top of lamb.
- Cook on low for 8-10 hours depending on size of leg. I cooked a 2.3kg leg for 10hrs.
- Strain juices from bottom of cooker for a delicious gravy!
