Gluten free almond meal, honey and blueberry cake

Ingredients

1 cup gluten free self raising flour

1/2 cup almond meal

1/2 cup almond milk

1/2 cup honey (melted)

1/2 cup coconut oil

1 tsp vanilla extract

2 eggs

1/2 punnet fresh blueberries (could use any fresh or frozen berry)

Directions

1Mix wet ingredients together, add to dry with a fork.

2Then add blueberries and fold through.

390 mins on high tea towel under lid.

4Enjoy!

Oh my goodness, I have just made this and am eating it at the moment. It is so light and fluffy, you wouldn’t know that it is gluten free! I used dairy milk and olive oil in mine as alternatives
