Ginger, Mint and Coriander Chicken

  • 2 chicken breast
  • Olive oil
  • 1/2 cup light soy sauce
  • 1 tsp raw sugar
  • 1 cup fresh mint leaves (chopped)
  • 1 cup fresh coriander (chopped)
  • 1 tsp grated ginger
  • 1 tsp minced garlic
  • Rice or mash to serve


  • -Cut chicken breast widths in quarters
  • -Heat oil in fry pan and (very) quickly put chicken pieces in turning until white all over
  • -Remove chicken from frypan and place into slow cooker
  • -Add all ingredients in slow cooker and combine
  • -Cook on high for three hours
  • -Serve with rice or mash
