Ginger, Mint and Coriander Chicken
Serving: 4
Ingredients
- 2 chicken breast
- Olive oil
- 1/2 cup light soy sauce
- 1 tsp raw sugar
- 1 cup fresh mint leaves (chopped)
- 1 cup fresh coriander (chopped)
- 1 tsp grated ginger
- 1 tsp minced garlic
- Rice or mash to serve
Instructions
- -Cut chicken breast widths in quarters
- -Heat oil in fry pan and (very) quickly put chicken pieces in turning until white all over
- -Remove chicken from frypan and place into slow cooker
- -Add all ingredients in slow cooker and combine
- -Cook on high for three hours
- -Serve with rice or mash
