400 grams Barramundi middle fillets (or fillets of choice)
1 whole egg
1/2 cup breadcrumbs
1/2 teaspoon garlic powder
1/4 teaspoon oregano
1/4 teaspoon thyme
1/4 teaspoon tarragon
1Line cooker with baking paper and turn on HIGH (check manual for dry cooking)
2Combine breadcrumbs and herbs in a bowl
3Crack egg in a separate bowl and mix
4Cut/slice fish fillets into bite sized pieces or strips
5Coat fish individually with egg baste using a brush
6Roll individually in crumb mix to coat well and set aside
7Repeat till fish pieces are exhausted
8Place coated fish bites into lined and preheated cooker leaving a gap between each piece
9Use lid with tea towel under and folded up over top
10Cook for 1 hour on HIGH turning after 30 minutes.
11Serve with fresh salad
