Fruity Pumpkin Cake
Ingredients
- 1 cup mashed cold pumpkin
- 125g sultanas
- 125g raisins
- 125g mixed dried peel
- 125g finely chopped apricots
- 1tbsp honey or Splenda
- 1 cup unsweetened orange or apple juice
- 1tsp bicarbonate soda
- 4egg whites or 2 whole eggs
- 250g whole meal flour
- 1tsp mixed spice
Instructions
- Combine fruit, orange juice and honey in saucepan. Bring to boil, remove from heat and stir in bicarbonate soda. Cool
- Beat egg White lightly, add pumpkin, beat until smooth add fruit mixture. Stir in flour and spice.
- For a moist cake soak fruit in juice overnight
