Fijian curried prawns

Ingredients
 

  • 500g green prawns
  • 400ml can coconut milk
  • 50g ghee
  • 1 diced onion
  • 1 Tbsp garlic
  • 1 Tbsp sugar
  • 1 Tbsp ginger
  • 5 curry leaves
  • 1 tsp cinnamon
  • 2 bruised cardamon pods
  • 1/2 tsp fenugreek
  • 1 tsp chilli
  • 1/4 tsp turmeric
  • 1 tsp ground cummin
  • 2 tsp ground corriander
  • 1/2 tsp paprika
  • 1 tsp curry powder
  • 2 tsp lime juice

Instructions
 

  • Place all ingredients except prawns in sc and cook on low for 2 1/2 hours. Place in prawns and cook for a further 30 mins (time will depend on prawns size, i used medium)
  • Serve on a bed of basamati rice
