Fijian curried prawns
Serving: 4
Ingredients
- 500g green prawns
- 400ml can coconut milk
- 50g ghee
- 1 diced onion
- 1 Tbsp garlic
- 1 Tbsp sugar
- 1 Tbsp ginger
- 5 curry leaves
- 1 tsp cinnamon
- 2 bruised cardamon pods
- 1/2 tsp fenugreek
- 1 tsp chilli
- 1/4 tsp turmeric
- 1 tsp ground cummin
- 2 tsp ground corriander
- 1/2 tsp paprika
- 1 tsp curry powder
- 2 tsp lime juice
Instructions
- Place all ingredients except prawns in sc and cook on low for 2 1/2 hours. Place in prawns and cook for a further 30 mins (time will depend on prawns size, i used medium)
- Serve on a bed of basamati rice
