Optional extra: add red kidney beans too.
8 hrs 5 mins
690g Chicken thigh
2x 420g Tins of chopped tomatoes
2x 300g Tins of corn (drained)
450g Can of black beans (drained and rinsed)
1pkt Taco seasoning
1Combine all ingredients in slow cooker, cover and cook on low for 8hrs.
2Remove cooked chicken and shred using 2 forks.
3Place shredded chicken back into slow cooker and stir well to combine.
4Serve with shredded cheese, over cooked rice.
5Makes a generous serve
6Optional extra: add red kidney beans too.

Yum yum yum! I added in zucchini, potato & carrot to make it a one pot meal. This recipe is going on the rotation of meals to cook.
