Fiesta Chicken
Optional extra: add red kidney beans too.
Serving: 6
Ingredients
- 690g Chicken thigh
- 2x 420g Tins of chopped tomatoes
- 2x 300g Tins of corn (drained)
- 450g Can of black beans (drained and rinsed)
- 1pkt Taco seasoning
Instructions
- Combine all ingredients in slow cooker, cover and cook on low for 8hrs.
- Remove cooked chicken and shred using 2 forks.
- Place shredded chicken back into slow cooker and stir well to combine.
- Serve with shredded cheese, over cooked rice.
- Makes a generous serve
- Optional extra: add red kidney beans too.
