Egg and Bacon Pie
Serving: 4
Ingredients
- 8 eggs.
- 4 bacon rashes
- 2 tomatoes
- 2 sheets puff pastry
- hand full grated tasty cheese
- dusting of Parmesan cheese
- pepper and salt to tast
Instructions
- spray and line your slow cooker with baking paper
- place a sheet of puff pastry on the bottom of the cooker
- cut and layer tomato over bottom sheet of pastry pepper sprinkle with salt and pepper
- layer bacon over tomato
- crack 6 eggs spread out over the bacon
- whisk 2 eggs and poor over the top to fill in gaps
- place the top layer of pastry over the filling pressing down so it roughly joins the bottom sheet of pastry (don't need to be overly fussy)
- place the lid on with a tea towel under the lid
- put on high for approx 3 hours ( each slow cooker is different so settings and times may vary)
