Easy Spicy Pumpkin Soup
Serving: 5
Ingredients
- 1 bunch of celery, roughly chopped
- 1/2 Jap pumpkin, roughly chopped
- 1 medium Sweet Potato, roughly chopped
- 2 Large Red Potatoes, roughly chopped
- 1 bunch Shallots, roughly chopped
- 1 Large onion, sliced
- 1 Litre Vegeta
- To add before blending:
- 3 tsp Cumin Powder
- 2 tsp Coriander Powder
- 1/2 tsp Turmeric Powder
- 1/2 tsp Chili Flakes
- 1 1/2 small avocadoes per litre
Instructions
- Add the first lot of ingredients into the slow cooker & turn it on.
- Cook for 7 hours - 2 hours high, 5 hours low
- When time is up add in the spices, stir
- Scoop mix into blender (or however you process it) & add the avocado (I blended in 1 litre lots)
- Enjoy!
